Sodium benzoate is a salt of benzoic acid and is used as a preservative. Benzoic acid can be synthesized or naturally sourced from cassia oil. This organic acid is efficient for preserving formulations against yeast and mold. Usually, it is used in conjunction with more broad-spectrum antimicrobial substances. It is most effective against fungi and is used at pH levels between 3 and 5. It isn't suitable to be used alone, so it is usually among additional preservatives.
